Culinary Heritage & Chef's Notes

In the NutriGuide test kitchen, Chief Culinary Specialist Stewart Lucas refined this classic Vegetarian Lasagne to celebrate vibrant, wholesome ingredients. By prioritizing aromatic layering and precise thermal control, this recipe achieves remarkable culinary depth while preserving natural micronutrients and wholesome texture.

At NutriGuide, our mission is to ensure that home cooking is both accessible and culinary-grade. When executing Vegetarian Lasagne, focus on fresh aromatics, dry surface contact for proper searing, and allowing the food to rest before serving.

Ingredients & Measurements

  • From: Radha Venkat radha@minos.Princeton.EDU
  • Date: Mon, 9 Aug 93 08:48:25 EDT
  • Taken (with modifications by me) from the Moosewood Cookbook:
  • Vegetarian Lasagne:
  • 1 large jar good pasta sauce
  • 1 lb either mushrooms, sliced, or spinach, cleaned and chopped
  • 12 lasagne noodles, half-cooked
  • 2 c Ricotta cheese
  • 1 c mozarella
  • 2 tsp wheat germ
  • 2 eggs
  • salt,pepper
  • 1/4 c parmesan cheese, grated fine

Chef's Sourcing & Quality Tips:

  • Produce & Aromatics: Always use fresh whole aromatics and seasonal herbs rather than dehydrated powders when possible.
  • Cooking Oils: Utilize cold-pressed oils with appropriate smoke points such as extra virgin olive oil or avocado oil.
  • Salt & Seasoning: Season from a modest height above the pan to ensure an even, uniform crystalline dispersion.

Step-by-Step Culinary Masterclass

Follow these sequential steps with careful attention to sensory cues and cooking temperatures:

Step 1: Technique & Execution

Mix the ricotta, mushrooms/spinach, wheat germ and eggs in a large bowl. (Do not crush the mushroom slices!) Add 1/2 tsp salt, and pepper to taste. (I use non-fat egg product and low fat ricotta.) Jazz up pasta sauce, if desired. (I usually throw in some extra oregano, basil and onions, and let the whole thing cook for about a half hour.) In a 9X13 glass baking dish, put a couple of tablespoons of the sauce on the bottom, spreading it evenly

Step 2: Technique & Execution

Put a layer of noodles in the pan. (You may have to trim one of the noodles to fit along the bottom of the pan, like such: -----------| | -----------| | -----------| | -----------| | Cover this layer with 1/2 the ricotta filling

Step 3: Technique & Execution

Cover the ricotta with roughly 1/4 the pasta sauce

Step 4: Technique & Execution

Then, some mozarella, about half of it

Step 5: Technique & Execution

Next, another layer of noodles, trimming as necessary

Step 6: Technique & Execution

Repeat ricotta, sauce and mozarella, using up the two cheeses

Storage & Freezing Tips

  • Refrigerator: Store in an airtight container for up to 2 days. Keep the components separate if possible to preserve texture.
  • Reheating: Reheat gently in a skillet on medium-low heat with a splash of olive oil or butter.
  • Freezing: Freezing is not recommended for this dish because ingredients like spinach/eggs become soggy, rubbery, or mushy when defrosted.
